【食譜】上海菜飯|正宗江浙名菜,鑄鐵鍋料理零失敗
這次來做簡單的上海菜飯,上海菜飯最早是江浙一帶的家常菜色,通常是把剩下的菜加上飯去攪拌炒過,之後正宗的作法則會使用家鄉肉或醃肉來爆香後悶煮,其實說難倒也不難,使用鑄鐵鍋了話可以減少難度不容易失敗喵。

上海菜飯(4人份)
材料:
蔥*1根
水*2杯
油*適量
米酒*半杯
香腸*3根(可不加)
辣椒*2根
白米*2.5杯
香菇*5朵
蒜頭*2個
薑片*2片
豆皮*200g
青江菜*900g
家鄉肉*1塊

作法步驟:
1.薑片、蒜頭切末,香菇切片,蔥、辣椒切花,家鄉肉切丁。

2.豆皮切小片,青江菜切小段之後把梗跟葉分開。

3.加一些油之後小火爆香香菇、蔥蒜末約1分鐘。

4.加入家鄉肉丁炒約3分鐘。

5.加入米翻炒5分鐘。

6.加入豆皮、一半的青江菜梗,之後小火翻炒2分鐘。

7.加入水2杯、米酒半杯之後放入香腸蓋鍋小火煮15分鐘。

8.先把香腸拿出來切片,之後把剩下的青江菜葉跟梗放入一起炒2分鐘,最後再蓋鍋悶10分鐘後即完成。
